Ham & Potato Breakfast Casserole

24 oz pkg Potatoes O’Brien
2 cups ham, cubed
1 small onion, chopped up

1 16 oz container sour cream
1 can cheddar cheese soup (undiluted)
1 can cream of potato soup (undiluted)
1 cup shredded cheddar cheese
¼ tsp pepper

In large bowl combine potatoes, ham & onion

In another bowl combine sour cream, both cans of soup, pepper and ½ of cheese, mix well and pour over potato mixture. Mix well. Pour into greased 9 x 13 pan, sprinkle remaining cheese over top and bake uncovered at 350 degrees for 60 minutes.
