Cook chicken breasts; cool then fine chop or shred. Mix with all ingredients other than noodles & cheese.
Cook noodles according to package. Spray PAM in a 13"x9" pan.
Start layers with mixed ingredients, then 4 noodles, mixed ingredients, then 8 slices of cheese, then noodles, mixed ingred's, top with cheese.
Cook 30-45 minutes at 350° until hot in center and cheese has melted.
Serve with fat free sour cream, jalepenos, chopped tomatoes and more salsa if desired.
